Former MLB pitcher set to take Valley poke chain nationwide

Koi Poke, a Valley-based poke bowl restaurant concept, plans to change its name and expand on a national level through franchising.

Former Major League Baseball pitcher Todd Stottlemyre is leading the franchising effort of Koibito Poke.

Stottlemyre, who pitched for a number of teams including the Arizona Diamondbacks, founded and expanded Koi Poke around the Valley.

“With the quick success of Koi Poke in Arizona and realizing we have the potential to build the right team to leverage a brilliant plan for creating a franchise model, it was impossible for us not to look at expanding this brand on a national level,” Stottlemyre said in an Oct. 22 announcement.
