First and foremost, why is it called Stoking Social Hour? Basically, the employees have to maintain their coal brick ovens. From around 4 - 4:30 p.m., they knock down any old coal or ash inside the ovens. Then, they rebuild the fire with new coal, clean and reset to the perfect temperature to craft the award-winning pizzas.
When they are stoking the oven, they can't make pizza. So, instead they offer a special menu from 3:30 - 6 p.m. daily for their Stoking Social Hour.
