Sandra Van Deraa, general manager of Salt and Lime Modern Mexican Grill in Scottsdale, had seen restaurants and bars in other cities do Christmas “pop-ups,” decorating the restaurant to the hilt with Christmas decorations, and she always wanted to do one herself.
“Since it’s been Covid, people are not in good spirits, so I wanted to make a destination where people would want to come, and they’d feel good and happy,” she said.
She spent eight hours on Thanksgiving setting up decorations in the restaurant, and finally completed the decorating job about a week later.
Along with the decorating, she also temporarily changed the restaurant’s name, to “Feliz Navidad Cantina.”
