Drive-thru Gyro Shack restaurant eyes Phoenix for expansion

The politics and demographics of the Phoenix area are why an Idaho-based Greek cuisine restaurant is looking to expand into the Valley.

Gyro Shack is looking to add a number of corporate-owned and franchised locations of its drive-thru gyro concept in Phoenix in the next year.

The concept was started in Boise, Idaho in 2010 by Gus Zaharioudakis, who was operating out of a former drive-thru coffee shop. Then in 2015, Seth Brinkand his partner Doug Millerpurchased the company and started expanding it through the Boise area. Ownership changed hands again in February 2020 when two Gyro Shack franchisees, Mark Urnessand Matt Jeffries, purchased the company. Now they are looking to grow in other markets.

Urness and Jeffries chose Phoenix as a location to open its first corporate-owned stores outside of Idaho. The goal is to have one or two corporate-owned stores opened in the next six to nine months, said Brink, who is the company’s president.
