A California-based sandwich concept is expanding into Arizona.
Rubicon Deli, a premium sandwich shop, plans to open locations in Phoenix and Scottsdale over the next year, and at least a dozen more after that, the San Diego, California-based concept announced earlier in the week.
The Scottsdale restaurant will be near Scottsdale Road and Acoma Drive and is slated to open by the end of the year, the release said.
In Phoenix, the restaurant will be near Central and Virginia avenues and is slated to open spring 2018. Both restaurants signed 10-year leases, the company said.
It was founded in 1994 and bakes its bread in-house. Sandwiches are the obvious staple, but the fast-casual chain also serves salads, soups and acai bowls.
Sandwich prices are $7-$8 for a half and $11-$14 for a full, according to an online menu.
