Cafe Rio Mexican Grill prepares queso sauce

Queso Sauce
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 cup whole milk
12 ounces cheddar or Monterey jack cheese, shredded
1/4 cup grated Parmesan cheese
Tortilla chips, for serving
Salt and Pepper, to taste

Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute, constantly stirring. Slowly add the milk, whisking constantly, until slightly thickened, about 5 minutes. Remove from the heat and whisk in the cheddar or Monterey jack cheese until melted; add the Parmesan cheese. Season with salt and pepper, to taste. Keep warm. Serve with tortilla chips
