Tres Leches French Toast

Batter Ingredients:
· 1 cup evaporated milk
· 1 cup sweetened condensed milk
· 1.5 cups whole milk
· 6 eggs
· 1 tsp. Vanilla extract
· 1 Tbs. Cinnamon

Additional Ingredients:
· Mexican Telera Rolls
· Cajeta or caramel sauce
· Powdered sugar
· Sweetened whipped cream
· Fresh strawberries

To Cook:
· Pre-heat a griddle to medium heat.
· Combine all of the batter ingredients and whisk together until everything is evenly incorporated. Thinly slice the top and bottom off of the Telera roll (so that the batter will soak in) and then slice into 3 pieces.
· Dip Telera roll slices into the batter and cook for 1.5 to 2 minutes per side.
· Top with whipped cream, strawberries, cajeta and powdered sugar.

Fajita Veggie Tacos
Ingredients:
· One red pepper
· One green pepper
· One poblano pepper
· Two jalapeños
· 1 cup mushrooms
· ½ red onion
· ½ white onion
· Salt (to taste)
· Pepper (to taste)
· Butter (for sautéing)
· 1 cup Cotija cheese
· Corn tortillas

To Cook:
· Julienne red pepper, green pepper, poblano pepper, yellow onion, red onion, jalapeños and mushrooms.
· Sauté peppers, onions, jalapeños and mushrooms with butter in a skillet until onions are translucent and peppers are tender.
· Toss with a dash of garlic salt and pepper.
· Warm corn tortillas in a skillet.
· Serve with cotija cheese on top and lime wedge on the side.

Pork Belly Torta
Ingredients:
· 4 Telera Rolls
· 1.5 cup pork belly (cut into cubes)
· ½ cup refried beans
· 1/2 cup cheese blend
· 1.5 cup cabbage
· 1/2 cup pickled papaya slaw
· ¼ cup crema
· 1 avocado (sliced)
· pickled onion garnish

To Cook:
· Slow cook marinated pork belly for two hours on a low boil.
· Butter both sides of Telera roll. Toast on skillet.
· Start with bottom of Telera roll, add a layer of refried beans, pickled papaya slaw, pork belly, cabbage, crema, slices of avocado and top with the other half of the Telera roll.
· Makes about four sandwiches.
