Salmon Tower
Sliced seedless cucumber
Sliced radishes
½ diced avocado
5 oz tomato relish
4 oz smoked salmon
1 tbl sp of black pepper oil

1. Start by placing sliced seedless cucumbers in a circle
2. Pile the radishes on top of the cucumbers towards the middle
3. In the center, place a stainless-steel mold and stack up the half diced avocado
4. Then stack up the tomato relish
5. Finish by stacking the smoked salmon
6. Top it off with the black pepper oil

Pesci e Gamberetti
8oz salmon
2oz white wine
1oz butter
3oz chicken stock
4 shrimp cut in half
2oz red peppers
2oz green peppers 
Handful of capers and shallots
2oz spinach
Olive oil

1. Lightly powder your 8oz salmon in flour
2. Pan sear the salmon in a pan with oil
3. Throw in a pan and sauté butter garlic white wine chicken stock capers shallots and salt and pepper
4. Add the red and green peppers and shrimp cut in half
5. Sauté spinach with oil
6. The spinach goes on bottom, salmon on top and the sauce, the peppers, and shrimp go on top.

Chicken Milan
2- 4 oz lightly floured chicken breast (pan seared)
3 - large asparagus (grilled)
½ diced avocado
4oz diced tomato
2 oz diced red onion
2oz fresh lemon juice
2 oz extra virgin olive oil
1 tbl sp jfresh basil
1 ts sp chopped Italian parsley
salt & pepper to taste

1. Lightly powder your two pieces of chicken in flour
2. Pan sear the chicken in a pan with oil
3. On the grill grill three pieces of asparagus add a pinch of salt and pepper
4. In a mixing bowl add the tomato avocado red onion and basil and toss with lemon juice and extra virgin olive oil.
5. Place the asparagus on bottom the two pieces of chicken in the middle and the avocado tomato and onion on top of chicken topped with parsley.
