Alessio Torino Rosso    .5oz
Angostura Bitters    4 Dashes
Garnish- Orange Twist, Luxardo Cherry
Build ingredients in tin, stir till condensation forms, strain over ice in bucket glass.    

Spicy Shrimp 'Cajun Style'
1 lb. Shrimp 26/30, clean, tail on
1 ½ T. olive oil
1 T. Cajun seasoning
1 clove garlic, minced
Marinate the shrimps with the olive oil, garlic and Cajun seasoning. Let sit for about 10-15 minutes; skewer the shrimp on 6-inch skewers, place on a hot grill and cook until just pink and opaque

Cilantro, Habanero and Citrus Vinaigrette
1 C. passion fruit juice
Juice of 1 lime
2 T. olive oil
2 T. apple cider vinegar
2 T. honey
1 habanero, finely minced
2 T. fresh cilantro, finely chopped
Salt and Pepper to taste
In a small bowl, mix all ingredients well together; add salt and pepper to taste
-Fill one-third martini glass with habanero-citrus vinaigrette, then place one skewer of shrimp into the glass. Serve with a wedge of lime

Smoked Pear Royale
Absolut Pears    1.5oz
Dekuyper Triple Sec    .5oz
Cranberry Juice    1.5oz
Lime Juice    .5 oz
Dry Ice    Teardrop with tongs (Please wear gloves)
Build ingredients in tin shaker and strain into a martini glass.  Garnish - Lime Twist
