RECIPES: Using pumpkin & chai

It's fall, which means pumpkin is officially on everyone's mind - but that doesn't have to come with fattening and unhealthy dishes!

Sasha Raj, owner of 24 Carrots Natural Café & Urban Juicery showed us some deliciously healthy options:

Pumpkin Cheesy Chipotle Quesadillas
12 oz. pumpkin purée
1 cup cashew, soaked till soft
1 cup sesame seed
1 tablespoons coconut oil
1/2 cup coconut milk
2 cloves garlic
2 tablespoons nutritional yeast
1/2 tsp. nutmeg
1 tablespoon limejuice
Chipotle powder to taste
Salt & pepper to taste

Purée together and then heat on medium heat till thickened. Spread thickly into your tortillas and pair with additional veggies or nuts (we enjoy this with roasted spaghetti squash, black beans & spinach) the toast & dig in!

Creamy Pumpkin Oatmeal
1/2 cup oats
2 cups rice milk
1/2 tablespoon maple syrup
1/3 cup pumpkin purée
Pinch nutmeg
Pinch cinnamon
Pinch ground clove

Heat all of the above for 5-6 minutes while continuously stirring; this will make your oatmeal creamier! Once bubbling add:
1/4 cup coconut milk
1/2 teaspoon coconut oil
1/2 tsp. lemon zest
Pinch salt

Stir in and pour into bowl- pile high favorite toppings (pumpkin seed brittle or granola, stewed cherries, coconut whipped cream)!

Chai Shake Parfait
Chia chai pudding:
1/2 cup unfiltered apple juice
1/4 cup 24Carrots chai nectar
1/4 cup maple syrup
1/3 cup chia seeds
1/2 cup apple sauce
1/4 tsp. vanilla

Stir together and set aside for 6-8 hours.

4 oz. 24carrots chai nectar
1 cup non-dairy ice cream
1/2 frozen banana

Blend together & layer with chia chai pudding! Top with coconut whipped cream & drizzle with caramel
