**Back to Basics Chicken Breast: A How-To Recipe Guide


1.    How to Marinate and Grill: The Perfect Grilled Chicken (thinly sliced)

Makes: 4 chicken breasts
Prep time: 10-minutes
Cook time: 6-minutes

Ingredients:

2 boneless, skinless chicken breasts, halved horizontally
4 Tablespoons extra-virgin olive oil
2 cloves garlic, peeled and sliced
1 shallot, peeled and thinly sliced
3 Tablespoons flat-leaf parsley, chopped ½ lemon, zested and juiced
2 teaspoons kosher salt
2 teaspoons freshly cracked black pepper

Procedure:

Combine all of the ingredients together in a large, re-sealable plastic bag and shake gently to coat the chicken breast evenly with the marinade.  Marinate the chicken in the fridge for up to 24 hours. 

Heat a large grill pan to medium high heat.  Remove the chicken from the marinade and shake off the excess oil.  Dispose of the remaining marinade. 

Place the chicken in the grill pan at a diagonal and cook for 1.5 minutes.  Turn 45° and cook an additional 1.5 minutes.  Flip the chicken over and repeat the same process.  Remove from the grill pan and rest the chicken breast for 5-10 minutes before serving.

2.    How to Standard Bread and Shallow Fry: The Perfect Grilled Chicken

Makes: 4 chicken breasts
Prep time:
Cook time:  6-minutes

Ingredients:

2 boneless, skinless chicken breasts, halved horizontally (thinly sliced)
2.5 teaspoons kosher salt
2 teaspoons freshly cracked black pepper
1 teaspoon garlic powder
1 cup flour
3 eggs beaten
2 cups panko bread crumbs
1 lime, juiced
2 teaspoons honey
1 Tablespoon flat-leaf parsley, chopped Extra-virgin olive oil to fry

Procedure:

Season the chicken breasts with the salt, pepper and garlic powder.  Dredge each chicken breast through the flour, then eggs, then panko breadcrumbs. 

Heat a large cast-iron skillet to medium heat. Add 4-5 Tablespoons to the cast-iron skillet.  Cook the chicken breasts in the hot oil for 2-3 minutes on each side.

When the chicken comes out of the pan, squeeze the lime, drizzle the honey, and sprinkle the parsley over the top. 


3.    How to Roast: The Perfect Honey-Mustard Chicken 

Makes: 4 chicken breasts
Prep time:
Cook time: 15-minutes

Ingredients:

4 boneless, skinless chicken breasts
2 Tablespoons extra-virgin olive oil
2 teaspoons kosher salt
2 teaspoons freshly cracked black pepper
2 Tablespoons Dijon mustard
2 teaspoons honey
2 Tablespoons flat-leaf parsley, chopped ½ cup panko bread crumbs ½ cup grated parmesan cheese

Procedure:

Preheat the oven to 450°.

Coat the entire chicken breast in the olive oil and season with salt and pepper.  Mix together the Dijon mustard and the honey and brush on top of the chicken breasts.  Mix together the parsley, panko and cheese.  Evenly top each chicken with this mixture. 

Bake the chicken for 15-minutes on a non-stick baking sheet.

Remove from the oven and rest the chicken for 5-10 minutes before serving.
