Cafe Rio Mexican Grill's Chef Jennifer Burns makes fresh guacamole

Chunky Guacamole
4 ripe avocados, halved, pitted
3 limes, juiced
1/2 teaspoon kosher salt
1 large tomato, juiced, diced
1/2 red onion, chopped
1 garlic clove, minced
1 jalapeno or serrano pepper, diced
1/4 cup fresh cilantro, finely chopped
Tortilla chips, for serving

Mash the avocados, lime juice and salt with a fork. Add the tomato, onion, garlic, pepper and cilantro. Gently mix together. Serve with tortilla chips.
