Watermelon Mango Jicama Shrimp Salad Appetizer
Mango Jicama Shrimp Salad
· 2 tablespoons diced fresh mango
· 1 teaspoon chopped fresh cilantro
· 1 tablespoon diced jicama
· 1 pinch of diced fresh Serrano pepper
· 1 pinch chopped fresh mint
· 1 pinch granulated sugar
· 1 lemon (squeezed)
· Cooked shrimp
Mix all ingredients well and marinate for three hours.
Cut watermelon into a cylinder shape about two inches deep and three inches long.
Scoop some of the watermelon out to make a hole for the shrimp salad.
Add the mango jicama shrimp salad.
Guacamole Carne Asada/Chicken Tostada
· Carne asada or chicken
· Guacamole
· Prickly pear cactus pico de gallo
· Shredded cabbage
· Queso fresco
· Crema fresca
· Green tomatillo chile de arbol salsa
· Mini fried tortilla
Take first six ingredients and layer as desired on the mini fried tortilla.
