Chef Doug Robson's Gallo Blanco reopens on Saturday, July 1 for dinner

After two years away, Gallo Blanco Cafe y Bar reopens its doors this weekend.

"Very excited. I'm very excited. We've been working on this for a year and a half," said Chef Doug Robson.

Robson and his team renovated the "American Way Market," a 1920s building near 10th Street and Pierce for his restaurant.

He said the "bones" of the structure were kept and the inside features a lot of wood and exposed wood trusses, along with Mexican art on the walls. To preserve the building, the kitchen was built outside of the restaurant.

As for the menu, Robson said the "staples" from the original Gallo Blanco such as the Chilaquiles and Gallo Blanco Guacamole were brought over, but that he also re-evaluated other items.

"We mixed it up," he said.

The restaurant officially opens for dinner at 5 p.m. on Saturday, July 1. It will be open for dinner to start, and will incorporate breakfast and lunch hours over the next several weeks, said Robson.

The original Gallo Blanco was located at The Clarendon Hotel and closed in 2015.
