Cocktails
SERRANO PALOMA
1 ½ parts Sauza® tequila
3 parts freshly squeezed grapefruit juice
½ part freshly squeezed lime juice
¼ part freshly squeezed lemon juice
½ part simple syrup*
2 fresh serrano slices
Soda water
Kosher salt, lemon wedge, and lime wedge for garnish
Begin by rubbing the rim of a glass with a lime wedge, and then dip the glass into kosher salt. Set aside.
In a cocktail shaker, muddle two slices of jalapeño with a splash of the tequila. Add the remaining tequila, lemon, lime, grapefruit juice, simple syrup* and ice. Shake vigorously. Strain into the prepared glass. Add ice and top with soda water. Garnish with a lemon wedge and lime wedge.
*The simple syrup is optional. If you prefer your drinks a bit sweeter, it is recommended.
VAMPIRO SANGRIA (VAMPIRE)
A popular drink to make with sangria in Mexico is called a Vampiro.  If you are a fan of Bloody Marys, you'll love a Vampiro, or Vampire. It consists of the following ingredients. Just combine them all in a shaker, then squeeze the lime wedges into a tall glass.
¼ cup white tequila, preferably Sauza or Herradura
¼ cup tomato juice
2 Tbl orange juice
1 Tbl fresh lime juice
½ tsp or more pure chile powder, or cayenne pepper or tabasco sauce, to taste
dash of kosher salt
freshly ground black pepper to taste
1 cup crushed ice
2 lime wedges
Squirt Soda
Food Items
CARNE ASADA SUSHI ROLL
1 Nori
3 oz sushi rice
2 avocado, sliced
1 tsp pico de gallo
1 oz cream cheese
1 tsp Prickly Pear Cactus
1 sliced jalapeno pickle

Served with sriracha dipping sauce, wasabi and pickle ginger

FRIED AVOCADO BITES
4 each avocado wedges (wrapped in grape Serrano bacon)
3 lemon wedges
Jalapeno remoulade:

·    1 jalapeno pepper
·    1 stalk celery
·    2 Tbl scallions
·    2 tsp parsley
·    1 tsp kosher salt
·    1 lemon, squeezed
·    1 cup mayonnaise
·    2 tsp creole mustard
·    1 tsp paprika
Place all ingredients in a blender and combine well.

PRICKY PEAR SHRIMP CEVICHE COCKTAIL
5 jumbo shrimp
¼ cup tomato juice
2 Tbl prickly pear cactus
2 Tbl pico de gallo
3 banana plantain chips
2 Tbl diced avocado

SUMMER SHRIMP TACOS
6 jumbo shrimp cut into small pieces
Watermelon, jicama and peach salsa:

2 Tbl diced watermelon
2 Tbl diced jicama
2 Tbl diced peach
1 pinch kosher salt
1 lemon, squeezed
1 Tbl chopped fresh cilantro
Pinch of chopped Serrano pepper

2 Tbl shredded cabbage
Crema fresca
2 Tbl diced avocado

FRIED PLANTAINS WITH BERRIES AND ICE CREAM
2 each ripe plantains, sliced
¼ cup butter
¼ cup cinnamon sugar
¼ cup blueberries
¼ cup raspberries
¼ cup blackberries
¼ strawberries
I scoop vanilla ice cream

Fry plantains until golden brown. 

Place ice cream in the center of the plate, add berries around, and finally add the plantains around the berries.
