Summer Quick Lunch
Crab Cakes with fresh avocado and spring mix salad
Crab Cakes
Makes 16
Serves 4
1 lb. lump crab meat
½ cup mayonnaise
½ cup bell peppers minced
10 chives minced
32 saltine crackers ground in food processor (all but 4 in a sleeve)
¾ tsp. Old Bay seasoning
Combine all ingredients mixing very well. Using hands or scoop make 1 oz. crab cakes. Place on a lined baking sheet date and wrap until ready to use.
Cook in a 375 degree oven for 10-12 minutes. Can pan fry too, but less calories if baked.
