Stop visiting the vending machine! Sue Berliner of b Naked Chocolates stopped by to share some tips on healthy snack ideas. Here are the recipes from today's show:
Watermelon & Cucumber Salad
2 Large cucumbers, peeled
2 Tablespoons Balsamic vinegar
2 Tablespoons Olive Oil
Finely chopped red onion
Crumbled pine nuts, walnuts or pumpkin seeds
Crumbled Feta cheese
Cut the half watermelon in half so you have 2 quarters. Separate the watermelon from the rind. Thinly cut each quarter into triangular shaped slices. Thinly slice the cucumber. Layer the two ingredients on a serving plate. Using a fork, whisk the Balsamic vinegar and olive oil in a small bowl. Drizzle the dressing over the layered watermelon and cucumber. Add your favorite toppings. Add a light sprinkle of salt if desired.
Fresh cherry tomatoes
Herbs de Provence or Italian spice blend.
Coarse sea salt
Wash the cherry tomatoes. Leave the water on the tomatoes and place in a bowl. Sprinkle the tomatoes with your choice of spice blend then sprinkle with the salt and garlic powder. Chill in the refrigerator for 30 minutes, spices should form a light crust on the tomatoes. Serve.
1 cup diced zucchini
1/3 cup raw tahini
2 to 3 tablespoons fresh lemon or lime juice
1 to 2 cloves garlic, minced
1/2 teaspoon sea salt, or to taste
1-2 teaspoons ground coriander
Add ½ small jalapeno pepper finely chopped
Substitute curry spice blend for the coriander
Place half the lemon or lime juice, 1 garlic clove, zucchini, tahini, 1 tsp coriander, ¼ tsp salt in the blending jar of a high speed blender or mini food processor. Blend until smooth and creamy. Add more juice, garlic, and salt according to taste. Serve chilled with bell peppers, slices of cucumber, radishes or your favorite veggies.
