RECIPES: Light and healthy foods from Saba's Mediterranean Cuisine

Lamb Shank spices
(recipe for 4 lamb shanks)
1/4 cup olive oil
1 1/2 table spoons salt
1 tea spoon black pepper
1 tea spoon mint
1 table spoon oregano
1 table spoon basil
1 tea spoon cumin
4 chopped garlic cloves
1/2 cup of chopped onions

Instructions:
Take a large sauce pot and add 1/4 olive oil to the bottom. Heat the oil on high, once oil is hot add the shanks to the oil.  turn burner down to med and lightly brown each side of the shanks. Once shanks are slightly browned add the garlic and onions to the pot slightly caramelize the onions and garlic with the shanks. Then add the spices and cover with water. Boil for approx. 3 hours or until lamb is easy to pull away from the bone. *If cooking in a crock pot cook on high for 8 -10  hrs or until lamb is spoon soft.(can be cut by lightly pressing a spoon to it.)

Tomato sauce
16 oz stewed tomatoes
3 table spoons olive oil
1 table spoon salt
1/2 tea spoon pepper
2 table spoon basil
1 table spoon chopped garlic
1/2 cup red wine
1/4 cup diced onion

Instructions:
add oil to large sauce pan and heat well. Add onions and garlic to hot oil and stir well until they are caramelized. Add stewed tomatoes, wine and spices to the pot and bring to sauce a boil. Once the sauce boils turn to med-low and simmer for 30 min or until sauce starts to thicken. Top lamb shank with sauce and serve with your choice of sides.

Prawns Dinner with a zesty tomato sauce.
Ingredients:
SERVES 4:

20 Medium sized tiger prawns (de-shelled and cleaned)
32oz tomato sauce
2 teaspoon salt
2 tea spoon oregano
2 tea spoon basil
1 tea spoon black pepper
1 table spoon ground garlic
4 table spoons olive oil
1/4 cup copped parsley
4 table spoons crushed feta
1/4 cup diced onion
 
Directions:
Use a large frying pan or med. sauce pan. Put the olive oil in the pan and heat on medium. Add garlic and onions then sauté until caramelized. Then add salt, pepper, basil, oregano. Heat until aromatic (approx. 1 min). Then add prawns to pan keep agitating to cook both sides of shrimp and to ensure not to burn spices (sauté shrimp for approx. 1 1/2 min.). Now add 1/4 cup white wine. Once the wine starts to simmer add the parsley , feta and tomato sauce. Heat until sauce starts to simmer and then remove from heat. Serve with rice or noodles and or Grilled veggies. Garnish with feta crumbles.
