GRILLED SALMON SALAD

Combine all marinade ingredients well. The longer you let them sit the better but don't be afraid to use this marinade right away if time doesn't allow.

Using a sharp knife slice the salmon on an angle running along the grain lines about 1 inch thick.
Dredge the sliced salmon in the marinade for a minumum of 20 minutes. Place the salmon on a very hot grill (8-9 out of 10) on a stove top or 400 degrees. Try not to move the vegetable once placed until ready to turn.

Turn with a high temp spatula when ready. Set aside and prepare the salad mix. Arrange the salmon strips, and tomato wedges on the salad mix in a way that is appealing to the eye, and sprinkle with sesame seeds.

Season with fresh black pepper to taste.

GRILLED NOPALES TOSTADA

Using a sharp knife cut the cactus pad in strips starting about 1/2 inch from the wider base end all the way to the tip so it looks like the fingers of a glove.
Dredge the sliced tomatoes and cactus pads in the in the marinade for a minumum of 20 minutes .
Place both the tomatoes and the Cactus leaves on a very hot grill (8-9 out of 10) on a stove top or 400 degrees. Try not to move the vegetable once placed until ready to turn.

Use tongs to turn the cactus pads, and a high temp spatula to turn the tomatoes when ready.
Set aside and prepare the tostada by applying a nice coating of mayonaisse, dice the cactus pad into half inch pieces leaving the base stem behind.
Place the grilled tomato on the tostada, and sprinkle with the diced cactus, followed by a sprinkle of taosted chia seeds
Season with fresh black pepper to taste.
