Oven Roasted Sweet Potato Hash
Ingredients:

· Sweet Potato, 6 oz portioned
· Corn, 0.5 oz portioned
· Asparagus thin sliced, 0.5 oz portioned
· Red bell small dice, 0.5 oz portioned
· Leek thin sliced, 0.5 oz portioned
· Eggs OE, 2 each
· Herbed Mousse, 1.5 oz (recipe below)
· Spinach, 0.25 oz

Directions:
Saute both sweet potato and vegetables in a sauté pan until hot. Cook eggs to desired temperature. Toss spinach with potato and vegetables then place in bowl. Top with eggs and garnish with a cornell of mousse.

Herbed Mousse recipe
Ingredients:

· ½ cup thyme
· ¼ cup rosemary
· 3 lb cream cheese
· 3 lb goat cheese
· 1 c heavy cream

Directions:
Fine chop the fresh herbs, add to mixing bowl with goat cheese and paddle. Add cream cheese and heavy cream and mix until consistent texture.

Everything Croissant Sammie

Ingredients:
· Scrambled egg, 3 ounces
· Munster Cheese, 1 slice (.25 ounce)
· Basil Pesto, 1 tbsp (recipe below)
· Proscuitto, 2 slices (1 ounce)
· Arugula, .5 ounces

Directions:
Scramble eggs and toast halves of croissant. On bottom of croissant, spread 1 tbsp of basil pesto. Add sliced prosciutto to the eggs to warm up and top with munster cheese. Melt under the salamander and add to the pesto half of the sandwich. Add fresh arugula and add top piece of croissant. Cut in half and serve with 1 side of prep potatoes.

Pesto recipe
Ingredients:

· 1 bag arugula
· 4 oz kale
· 16 each garlic cloves
· 6 each lemons (squeezed)
· 1.5 cup pistachios
· 1.5 qt blend oil
· Salt and pepper to taste

Directions:
Add arugula, garlic and pistachios to blender, followed by lemon juice and blend oil. Blend until desired consistency. Add salt and pepper to taste.
