A wood-fired pizza pub has joined the group of independent boutiques and eateries that make up the Union shops at Biltmore Fashion Park in Phoenix. Forge opened at the north end of the Union shops, across the aisle from Royal Coffee, on Oct. 7. This is the first Forge outside of California. The original is at Jack London Square in Oakland and the second store is in Danville. Among the starters are fried cheese curds; baby octopus with cucumber salad, charred tomato vinaigrette and bread crumbs; slow-cooked, on-the-bone ribs with honey jalapeño slaw; and Cheese Whiz, oven-baked cheeses with sausage and bacon served with house bread.Neapolitan-style pizzas are baked in an imported Valoriani oven. The Fat Boy Pizza is topped with house-made sausage, bacon, pickled peppers and cream. The Three Cheese Pizza has mozzarella, seasoned ricotta and Parmesan with roasted garlic, arugula and lemon. Tomatoes, shaved pineapple, ricotta, ham and Calabrian peppers top the Mainlander pizza.Soups, salads, sandwiches and desserts round out the menu. The bar will serve eight craft beers on draft, wine and cocktails. The dining room extends into a patio with two fire pits.
