Roaring Fork Chef prepares tomahawk steak

Whiskey Shellac
1 qt veal stock
16 oz whiskey of choice: cheaper as we are reducing it
10 oz red table wine
5 shots expresso
2 oz coffee flavored liquor
3 oz molasses
4 oz brown sugar

reduce all booze together till half original quantity
add stock again reduce by half
add sugars and expresso reduce till desired thickness
will cool and create a glaze over steak

Tomahawk Steak
30-40 oz steak
3 oz coarse black pepper
3 oz kosher salt
2 oz favorite seasoning ie: garlic, onion, spice blends,

20 minutes prior to cooking
blend all three seasonings
rub vigorously into steak while over a tray
allow steak to rest in tray for allotted 20 minutes
grill slowly over lower heat till internal heat of 145 degrees
wine drinking break....
allow to rest another 10-20 minutes before slicing and adding shellac
slice as thin as comfortable and enjoy
