Make a healthy muffin for less than a $1 and in 5 minutes

Eat healthy and save time and money by making Jorge's Skinny Muffin. It takes 5 minutes or less to make, and will cost you less than $1.

I love when I find this kind of stuff. The Skinny Muffin is lean and full of nutrition without breaking the bank and taking forever to make.

Jorge's Skinny Muffin

The ingredients in this muffin have only the best things in them. Each item serves a great purpose for your body. The coconut oil is a good fat, the flax seeds are full of fiber, and the egg is a good source of protein.

Ingredients (makes one serving)

1/4 cup ground flax

1 tsp baking powder

2 tsp cinnamon

1 tsp coconut oil

1 egg

1 packet stevia (I do not like the after taste of stevia, so I substitute 2 tsp coconut sugar instead which will add 20 calories)

Total calories is 263 with stevia, add 20 calories if you use coconut sugar.

Directions

Mix all ingredients together in a microwave-safe mug and microwave for 50 seconds. Take it out of the microwave and turn the mug over onto a plate and let it slide out of the mug. Let cool for a few minutes and then enjoy your inexpensive, quality muffin. 

Cost to make this muffin

¼ ground flax seed $.12

1 tsp baking powder $.07

2 tsp. cinnamon $.10

1 tsp coconut oil $.15

1 egg $.16

The total cost is $.66 per muffin.
