RECIPE: Scottsdale '21 Cakes' Pumpkin cupcakes

SCOTTSDALE, AZ - It's Small Business Saturday.

It's the day where locals are encouraged to support their local businesses during the holiday shopping season.

21 Cakes, a gourmet bakery in Scottsdale, joined ABC15 Mornings to discuss the importance of Small Business Saturday. Watch the video in the player above.

They also shared a tasty recipe to make Pumpkin cake or cupcakes:


What you need:

Oil - 1 1/4 cups
Sugar - 2 cups
Brown sugar - 1 1/2 cups
Vanilla - 1 tsp.
Pumpkin - 2 cups
Eggs - 3
Flour - 1 1/2 cups
Baking powder - 2 1/2 tsp.
Baking soda - 2 tsp.
Salt - 1/2 tsp.
Allspice - 1/2 tsp.
Cinnamon - 2 tsp.

Mix dry ingredients and set aside. Mix sugars, oil and eggs. Add pumpkin and combine. Add dry ingredients to mixture. Combine and bake at 350 degrees until toothpick comes out clean.

Frost with favorite buttercream or cream cheese frosting.
