True Food Kitchen prepares heart-healthy dishes

Executive Chef Shane Cox from True Food Kitchen prepares some heart healthy dishes.

Quinoa Tabbouleh Salad
Serves 6

1 box Red Inca Brand Red Quinoa
3 lemons Juiced
4 TB Extra Virgin Olive Oil
2 tsp salt (optional)
1 tsp red chili flakes
6 oz Arugula Leaves
4 TB Pomegranate Seeds
1 cup roasted peeled and diced beets
2 cloves garlic smashed through a garlic press
½ cup chopped parsley
1/3 cup chopped mint
1/3 cup chopped green onion

For this recipe cook the quinoa as directed on the box until tender and fluffy.  Allow the Quinoa to cool completely before assembling the salad. 

Add the garlic, lemon juice, salt, Olive Oil, chili flakes along with all the chopped herbs.  You can taste it at this point and add more lemon, or garlic if you like.  Toss in the roasted beets and arugula leaves.  

Once you have added the arugula it is important to serve it as soon as possible.

Pan Seared Sea Bass
Sea Bass 5 ½ oz
Kosher Salt ½ tsp
Grapeseed Oil 2 tsp
Purple Potatoes (roasted) ½ cup
Brussels Sprouts (roasted) ¼ cup
Mushroom Blend (roasted) ¼ cup
Wok Aromatics 1 tsp
Umami Sauce 2 tbsp
Scallions (julienned) 1 tsp

1. Season the sea bass with salt on both sides.
2. In a hot saute pan add half of the oil and sear the fish, place in oven to roast.
3. In hot pan saute potatoes, brussels sprouts, mushrooms and aromatics, tossing to cook evenly.
4. Once bass is done remove it from the oven and flip.
5. Fish should be golden brown but not over crisp.
6. Place cooked vegetable in center of plate, top with cooked Sea Bass.
7. Drizzle fish and vegetables with umami sauce.
8. Top with scallions.

Here in Arizona, the leading cause of death is heart disease, which accounted for 10,151 or 22.5 percent of all deaths in 2009. Stroke and cerebrovascular diseases, accounted for 2,010 deaths in 2009.
