'Banh-Mi-Style' Hot Dog at Fort McDowell

Chef Hung Dinh came to the shop to make a Banh-Mi-style hot dog, here is the recipe:

Hot Dog 'Banh-Mi Style'
Hot dog cooked, prefer grill
Sriracha Aioli
Daikon & Carrot Pickle
Cilantro sprigs
Jalapeño slice (option)
Hot dog bun or Brat bun, warm

Spread aioli on both side of the bun, add hot dog then top it of with pickle, cilantro

Sriracha Aioli:
1 T. mayonnaise
1 t. sriracha
Dash of salt
In a bowl, mix all ingredients well together

Daikon & Carrot Pickle:
1 carrot stick
½ lb daikon radish
2 t. salt
2 t. sugar
1 ¼ C. white vinegar
1 C. warm water (warm enough to easily dissolved sugar)
½ C. sugar
Glass jar
Cut carrot and daikon into julienne. Place into a large bowl and toss the carrot and daikon with salt and 2 t. sugar until well coated. Knead and massage the vegetables for 3-4 minutes or until they begin to soften.
Transfer the carrot and daikon to a colander, rinse with cool water and drain well
In a bowl, mix together sugar, the white vinegar and the warm water, until the sugar dissolves
Prepare clean jar, pack the vegetables into the jar and pour the pickling liquid over the vegetables. Cover tightly. Refrigerate
The pickles should sit at least overnight before eating. It will keep for up to a month
