RECIPES: Skinny Italian dishes from Pasta Brioni


Chunky Cacciatore
    1 red bell pepper, julienned
    1 green bell pepper, julienned
    1/2 large yellow onion, julienned
    2 large chicken breasts, grilled, and diced
    4oz button mushrooms, sliced
    2 tbsp roasted, minced garlic
    salt and pepper, taste
    1 tsp oregano
    2 tbsp julienne fresh basil
    16oz marinara (won't disclose recipe)
    12oz cooked penne pasta
Place all ingredients except pasta in sautee pan (this is the healthy part,
you avoid the oil cooking the vegetables first).  Place the pasta in boiling
water to heat up, plate raw pastsa on one side of plate and remaining
ingredients, once cooked through, on other.  Garnish with fresh basil

Balsamic Chicken
    2 large chicken breasts, grilled and diced
    1/2 red onion, julienned
    2 tomatoes, cut into eighths
    1 medium zuchhini, chopped
    2 tbsp minced garlic
    salt and pepper to taste
    2oz oil
    8oz balsamic honey glaze (won't disclose recipe)
    12oz risotto, blanched
Heat oil in sautee pan, add garlic, red onions, zucchini, salt, pepper, and
chicken.  Cook for 2 minutes and add sliced tomatoes and balsmic honey
glaze.  While waiting for the sauce to heat and come to a boil, place
blanched risotto in water for 15 seconds to heat.  Plate risotto on one side
of plate and sautee pan mixture on the other side.  

Honey Salmon
    4 6oz Atlantic salmon filets
    2oz julienne carrots
    2oz julienne zuchhini
    2oz julienne red bell pepper
    4 green onions, cut in same length as julienned vegetables
    4oz balsamic honey glaze (won't disclose recipe)
    salt and pepper, to taste
Salt and pepper salmon on both sides and place on grill, cooking thoroughly.
While salmon is cooking, vegetables, salt, pepper, and just enough water to
cover in sautee pan.  Cook vegetables in water, removing from heat 30
seconds after water boils in pan.  Strain water from vegetables in pasta
strainer and place on plate.  Place cooked salmon next to vegetables and
drizzle with balsamic honey glaze
