Chef Chris Nicosia from SASSI Restaurant shows us how to make Mama's Italian Meatballs.

SASSI Signature Italian Meatballs

Sliced bread (4 each)

Milk, for soaking bread
 
extra virgin olive oil (1/4 cup)

onions, finely diced (2 cups)

garlic, finely chopped (1/4 cup)

white wine (1/4 cup)

parmesean cheese, grated (1/4 pound)

pecorino cheese, grated (1/4 pound)

chopped parsley (1/4 cup)

chopped marjoram/oregano (1/4 cup)

chile flakes (2 tsp)

eggs (2 each)

ground pork (2 pound)

ground veal (2 pounds)

Salt and pepper to taste

Simple yet Wonderful Tomato Sauce Recipe


extra virgin olive oil    (1/4 cup)

medium red onion, small diced (1 each)

fresh garlic cloves, thinly sliced (12 each)

canned peeled whole plum tomatoes (28 oz cans) (2 cans)

fresh heirloom tomatoes(2 large or 4 small)

fresh basil leaves, torn (1/2 cup)

salt and pepper to taste
    
In a large sauce pot, heat olive oil over medium-hi heat    
Add onions and garlic and sweat until soft and translucent    
Crush canned and fresh tomatoes by hand and add to sauce pot    
Add torn basil and turn heat down to a low simmer    
Simmer, stirring often for 30-45 minutes    
Adjust seasoning with salt and pepper    
    
Use sauce to simmer prepared meatballs, or as a base sauce for other recipes    
Remaining sauce may be frozen and stored for future use
