NOCE  / Assorted nuts (will feed 2-4ppl)
2 oz cashews
2 oz almonds
2oz peanuts
2oz pistachios
¼  tsp of chipotle
¼ tsp powder
¼ tsp of onion powder
¼ tsp of garlic powder
1 tsp of kosher salt
¼  tsp of paprika
Method;
·       Mix nuts with all spices well
·       Store in air tight container

OLIVE / marinated assorted olives (will feed 2-4 ppl)
8oz of your favorite assorted olives
¼ tsp of granulated garlic
¼ tsp of onion powder
¼ tsp of dried thyme
¼ tsp of fennel seeds
¼ tsp of chili flakes
¼ tsp of paprika
5 bay leaves
½ orange zest
3 oz Vegetable oil
Method;
·       Strain olives of any water/liquid
·       Add all other ingredients and mix well
·       Keep refrigerated - will keep for 1 month

Salumi Panino (will feed 2- 4ppl)
6" Focaccia bread
4 thin slices of salami
4 thin slices of prosciutto
4 thin slices of coppa
4 thin slices of tomato
3 thin slices of smoked loaf mozzarella
Few rings of red onion
Few leaves of bib lettuce
Olive oil
Method;
Cut focaccia in half and drizzle with olive oil
Lightly toast bread (both sides) on the grill, oven or broiler
Layer with all other ingredients
Press down and cut in 2 or 4 small pieces


Turkey Panino will feed (2 - 4ppl)
(For the pesto aioli)
2 TBSP of Prepared mayo
1 tsp of prepare basil pesto
Few drops of lemon juice
Method
·       Mix all together very well
For the Turkey Panino
6 slices turkey
4 slices of cooked bacon
3 slices of tomato
Few leaves of bib lettuce
½ avocado sliced
2 TBSP of basil pesto aioli
4 slices of fontina cheese
Method
·       Cut focaccia bread in half
·       Lightly toast bread (both sides) on the grill, oven or broiler
·       Layer with pesto
·       Layer with all other ingredients
·       Press down and cut into 2-4 pieces

Cannoli
6 pcs of readymade cannoli shells
1.5 cups of ricotta
1.5 cups of mascarpone
1.25 cups of sugar
1 tsp of vanilla extract
1 TBSP of chopped pistachio
2 oz of Chopped chocolate (small pieces)
Few zests of an orange
Method
·       In a bowl add all ingredients and stir until well incorporated
·       Place mix into a piping bag
·       Pipe the filling into the shells one side at a time
·       Optional; sprinkle with chopped chocolate and pistachio on top of the exposed cheese
