HALOUMI CHEESE STUFFED CHERRY PEPPERS

Ingredients: Desired amount of
Halloumi cheese (or any grill-able cheese)
Cherry Peppers - cleaned
Olive oil

Stuff the peppers with cheese and grill will a little olive oil in a sauté pan until you get a roasted look and the cheese is heated.  


TEA SANDWICH

Ingredients: Desired amount of
Cured salmon
Shaved cucumber
Shaved radish
Radish sprouts
Marscapone cheese
Champagne vin.
1 Brioche loaf (or your preferred bread)


SALMON CURE

3lbs kosher salt
1.5lbs sugar
1.5lbs brown sugar
2g clove
.25oz cumin seed
.25oz pink peppercorns
.25oz coriander seed
1oz crushed red pepper
1oz fresh thyme
1/2 c citrus zest.
Toast clove, cumin peppercorns and coriander seed. Mix all ingredients together and cover salmon underneath and top. Cure for 12hrs.


AHI TUNA TARTARE

4oz sushi grade Ahi
1/2 avocado
3oz Meyer lemon segment
3-4 mint leaves
pinch of red onion
1oz champagne vin
salt n pepper to taste

Mix together well and serve with fried yucca roots.
