RECIPES: Fancy fare for ladies with Kelly's at SouthBridge

Chef Israel "Izzy" Medina shows us how to prepare fancy spring dishes for ladies with Kelly's at SouthBridge.

Oven Roasted Pork Chop
Pork
4 bottles pear cider
2 cups pear gastriqe
1qt chicken stock
Reduce all to 1qt that is your base for your glaze.

Ahi Tuna Cups
Ahi Tuna
Lettuce
1qt orange juice
1qt lemon juice
1c lime juice
8oz dried apricots
1/2c honey
1/2c champagne vinegar
1/4c Dijon mustard
2c salad oil

1) reduce juice by 1/2 add apricots and cool..
2) honey, vinegar & Dijon in blender for 1min
3) add citrus reduction
4) add oil and possibly water if needed
5) season with salt and acid as needed

Calamari Salad
Calamari
1/2 cup ponzu
1/4 cup champagne vin
2 bundles parsley
1 tbl spoon honey
1/4 oil blend
Juice of 1 lemon
Pinch of salt
