Chlodnik (Cold Polish Beet Soup)

A colorful, healthy, cold soup for summer
·    4 or 5 young, tender beets, with tops if possible
·    ½ teaspoon salt
·    2 cucumbers, peeled and grated
·    6 radishes, grated
·    3 tablespoons fresh dill, chopped
·    2 green onions (white and green parts), chopped
·    4 cups plain yogurt
·    4 cups kefir or buttermilk
·    1 cup sour cream
·    salt and pepper, to taste
·    3 hard boiled eggs, quartered
1.    Prepare the beets by removing and dicing the stems up to the leaves
2.    Add the chopped stems to a large soup pot
3.    Peel and grate the remaining beet roots, add to the pan
4.    Add enough water just to cover the beets, add salt
5.    Simmer until tender, about 15 minutes
6.    Cool the beet mixture
7.    Add the cucumbers, radishes, dill, green onions, yogurt, kefir, and sour cream.
8.    Season with salt and pepper
9.    Chill and serve garnished with hard boiled egg
Now that I know the proper way to make this, I usually substitute two jars of grated beets for the whole beets, and simply combine all of the ingredients and chill - 10 minutes max prep time.

Lemon Curd Trifle

Total time:  20 mins                Serves: 8-10
A memorable summer dessert
·    pound cake (recipe below)
·    2 cups heavy cream
·    1 jar lemon curd
·    limoncello liqueur
·    seasonal berries or stone fruit, sliced if necessary
1.    Slice pound cake, allowing slices to dry out a bit
2.    Whip cream until stiff peaks form
3.    Fold in lemon curd (you'll have better results if you whip the lemon curd a bit with a fork or a whisk before folding; it just makes the curd a little smoother and prevents lumps)
4.    To assemble, begin with a layer of the cream mixture, then a layer of cake
5.    Lightly sprinkle the cake with limoncello, add a layer of the cream mixture, then a layer of fruit.
6.    Repeat and chill

Pound Cake
Recipe type: Dessert                    Cuisine: American
Prep time:  10 mins                    Cook time:  1 hour
Total time:  1 hour 10 mins                Serves: 9
A rich buttery pound cake, that can be dressed up in so many ways
·    ½ c. butter, softened
·    1 c. sugar
·    2 eggs
·    1½ c. flour
·    ½ t. salt
·    ½ t. baking powder
·    ¼ t. baking soda
·    ½ c. buttermilk
·    1 t. vanilla
1.    Preheat oven to 325
2.    Cream butter and sugar
3.    Add eggs one at a time
4.    Combine dry ingredients and add to batter alternating with buttermilk and vanilla
5.    Pour batter into a lightly buttered 9 x 5 loaf pan
6.    Bake for approximately one hour at 325 degrees.

Fresh Vegetable Salad

Serves: 6-8
A refreshing, crunching salad - a nice alternative to green salads
·    1 Cauliflower, medium head
·    2 small dill pickles (or brine cured if you have them)
·    1 Golden Delicious apple, peeled and seeds removed
·    4 basil leaves
·    1 can corn, drained
·    ¾ cup plain yogurt
·    ½ cup mayonnaise
·    ½ teaspoon salt
1.    Finely dice the cauliflower, pickles, apple, and basil, I used my food processor
2.    Combine with the corn, yogurt, mayo and salt
3.    Chill until ready to serve
The key is to make sure everything is diced very small (about ¼ inch) and uniformly.
