RECIPES: 3 types of Indian fry bread from White Eyes Fresh Fry Bread

John and Alice Roach, owners of White Eyes Fresh Fry Bread, share their recipes for authentic Indian fry bread.

Green chili pork fry bread
2-3 lbs pork roast, diced
1 can diced green chili peppers
1 dried hatch green chili
3 roasted jalapeños
Salt and pepper and other spices to taste
16 oz. chicken stock.

Combine in a dutch oven or heavy pot and simmer with lid on for 2 hours. Shred pork and serve on white eyes fry bread with beans, cheese, lettuce and salsa or other toppings of your choice.

Fresh fish fry bread
1 1/4 pounds firm white fish, such as cod or halibut
1 egg lightly beaten
1 1/2 cups breadcrumbs
1 cup seasoned flour
Canola oil for frying

Dip fish fillets in flour, then egg mixture then coat with breadcrumbs. Fry lightly in oil (2-4 min per side) until done. Serve on white eyes fry bread with pico de gallo and spicy sour cream.

Dessert fry bread
1 cup sliced strawberries (mascerate in sugar for 1 hour and refrigerate)
Chocolate Sauce or Nutella
Vanilla Ice Cream
Whipped Cream

Fry the fry bread in hot oil for 20 - 30 seconds. Shake off excess and top with the sundae toppings of your choice.
