RECIPES: 24 Carrots shares heart healthy dish ideas

These vegan recipes from Sasha Raj, owner of 24 Carrots Natural Cafe and Juice Bar, are hearth healthy and delicious!

24 Carrot Beet Down Smoothie

1/2 cup chopped pineapple
½ chopped mango
2 cups orange juice
¼ beet, juiced
½ inch ginger root juiced
squish of lime
1 small avocado

Puree together to a thick delicious smoothie. For added deliciousness, add a pinch of lavender!

Raw Nacho Cheeze Tacos

Nacho Cashew Cream
1 cup cashew, soaked for 2-3 hours till soft
1 cup coconut milk
1/2 tsp smoked paprika
1/2 tsp cumin
Jalapeno to taste
2 tablespoons nutritional yeast
pinch dried oregano
salt and pepper to taste

Blend together on high till creamy and light, salt and pepper to taste.

Walnut "meat"

2 cups walnuts
1/4 cup sundried tomato, chopped
1/2 cup rainbow bell pepper, diced
1/8 cup red onion
2 cloves garlic, minced
1 tsp fresh lemon juice, extra to taste
2 tablespoon minced cilantro
1/2 tsp cumin
1 tsp of agave nectar
1/8 tsp chili powder
1 tsp braags or coconut aminos
salt and pepper to taste

Massage or pulse together in a food processor, till crumbly. Fill your favorite taco shells. At 24 Carrots, they make raw dehydrated vegetable tortillas but love them equally stuffed into raw cabbage shells. Top with your favorite toppings: salsa, cashew cream, layers of delicious veg, avocado and more.

Dark Chocolate Mousse

3 ripe, LARGE avocados, pitted and scooped
1/3 cup dark chocolate powder (70% or higher) we like to use 100% raw cacao
3 tablespoons agave nectar
1/2 cup fresh coconut cream, can use canned but make sure there are no fillers and preservatives
pinch of salt
1/4 tsp of good (great!) vanilla

Blend together till smooth and voila, delicious fluffy avocado dark chocolate mousse. Top with berries or coconut whipped cream.
