Ono with Beluga Lentils, Basmati Saffron Rice and Cabbage Slaw

Ingredients for 3 servings:
Beluga Lentils:
2 cups beluga lentils
¼ cup diced bacon
1 finely diced carrot
1 finely diced shallot
1 finely diced fennel bulb
1 tablespoon of minced garlic
12 cups chicken stock
Salt and Pepper
1 thyme sprig
Olive Oil

Cabbage Slaw:
2 cups mixture of hand julienned seasonal cabbages (red, green, napa…)
¼ cup chopped Italian parsley
1 cup thinly sliced baby kale
½ cup julienned radish
2 tsp minced garlic
4 tbs lemon juice
4 tbs olive oil
Salt and Pepper
1/8 cup micro greens

Basmati Saffron Rice:
2 cups of basmati rice
1 ½ cup of water
½ cup of water with 7 threads of saffron

Fish:
Ono (3 x 7 oz)
Olive Oil
Salt and Pepper
 

In a large skillet heat olive oil, sweat in garlic, then add bacon and cook until tender (3-4 minutes) stirring occasionally. Add carrots, fennel, shallots, season with salt and pepper; add lentils and stir all ingredients. Add 2 cup of chicken stock allowing flavors to blend. Finally add remaining stock and bring to boil. Reduce heat to low and continue cooking until almost all the liquid is gone (about 30 minutes). Taste and adjust seasoning.

Soak the julienned radish in the lemon juice with some salt. Cover and refrigerate for 30 minutes. When the juice presents a red ruby coloration, toss in the remaining ingredients.

In another large skillet add water, saffron water and rice. Bring to a boil, and then lower the heat to a simmer. Turn off heat, cover rice and cook for 8-10 minutes then remove from heat.

In a sauté pan, heat olive oil. Season fish with salt and pepper and place the fish in hot pan. Cook for about 3 minutes flipping once and allow ono to finish cooking for at least 4 more minutes on the other side.

In a bowl add saffron rice and the beluga lentils, then add ono on top and drizzle with olive oil. Build cabbage slaw on top of the fish and garnish with micro greens.
