RECIPES: El Palacio of Chandler prepares new menu items

El Palacio of Chandler Recipes

2 TBS cooking oil
4 ounces of chips
2 eggs
1 oz cheddar cheese
3 oz red enchilada sauce

Sauté chips in oil.  Once chips have softened, add raw eggs and scramble. Once eggs are almost done add cheese and enchilada sauce, enjoy.

Donkey Bites
10 oz mixed shredded cheddar and Monterey jack cheese
4 oz cooked chorizo
2 oz salsa
1 pinch of salt
2 oz diced green chilies
2 oz flour
2 eggs
4 oz corn flake crumbs

In a bowl mix cheese, cooked chorizo, salsa, salt, and green chilies. Make sure that the ingredients are thoroughly mixed.  Roll into 2" balls. Roll balls in the flour, set aside. Whisk egg, then dip each ball into the egg. Next, roll each ball in the corn flake crumbs. Deep fry at 350 degrees until golden brown.  
Queso Fundido
1 quart heavy cream
1/2 cup sour cream
1/2 cup cream cheese
1/2 cup chicken stock
1 cup cheddar cheese
1 cup queso fresco
1/2 cup diced green chilies

Start by placing heavy cream in a heavy bottomed pot and let slowly simmer for 20 minutes or until it has reduced by half.  Then add remainder of ingredients one at a time until they are all fully incorporated.  Remove from heat. Season with salt and pepper and enjoy.

Mariscos de Laguana Grande
1 lb Clams
1 lb mussels
6 oz Diced Shrimp 21-25
1/4 cup Diced onions and garlic
1/4 cup diced Green Chilies
1 cup Salsa

Sautee onions and garlic for 2-3 minutes. Add Shrimp until almost cooked.  Then add salsa, clams & mussels and cover with a see-through lid.  Cook just until most of the clams and mussels have opened and then serve.

Peppered Maria
2 oz UV Sriracha Vodka
1 bottle Negra Modelo
2 oz salsa
2 oz Bloody Mary mix
Mix vodka, salsa, and Bloody Mary strain over a glass filled with ice and pour beer over it
