Falafel
Ingredients
2 pounds chickpeas, soaked overnight
4 oz. onion, diced small
2 tbsp. parsley, chopped
¼ cup cilantro, chopped
½ oz. garlic, whole
1 tbsp. kosher salt
2 tsp. cumin
1 ½ tsp. coriander
½ tsp. black pepper
½ tsp. cayenne
¼ tsp. cardamom

Instructions
Place chickpeas in a bowl and cover with about 3 inches of water. Soak overnight. Drain chickpeas and lay on paper towels, patting to dry. Once dry, place in food processor with the remainder of ingredients until a coarse meal is formed. Scrape down sides and continue to pulse until mixture becomes almost a paste. The mixture should be able to form a ball. Form into 1 oz. balls. Let mixture rest for 1 hour in refrigerator before frying.

Fassolatha
Ingredients
1 pound white beans, cooked
1 tbsp. extra virgin olive oil
8 oz. onions, diced
12 oz. carrots, diced
4 oz. celery, diced
8 oz. tomatoes, diced
1 bay leaf
1 tbsp. fresh thyme, chopped
1 tbsp. parsley, chopped
4 cups bean cooking liquid
¼ cup tomato puree
2 tsp. kosher salt
½ tsp. black pepper

Instructions
Soak beans in water overnight. Drink soaking water and place in pot, covering with fresh water. Cook over medium heat until tender. Drain beans and reserve cooking liquid. In a pot over medium heat, as extra virgin olive oil. Add vegetables and bay leaf and cook until tender. Add vegetable stock, bean liquid and tomato puree. Add seasonings and herbs. Add beans and bring to boil, reduce heat to simmer and continue to cook until slightly thickened. Remove bay leaf and serve immediately.

Greek Burger
Ingredients
3 pounds 80/20 beef
8 oz. feta cheese, crumbled
1 ½ tbsp. dried oregano
2 tsp. fresh thyme, chopped
2 tsp. fresh parsley, chopped
2 tsp. fresh rosemary, chopped
1 tbsp. kosher salt
1 tbsp. black pepper
Pita bread
Tzatziki sauce (Store bought or homemade)
Romaine, cut
Tomatoes, sliced
Red onion, sliced
Cucumber, sliced
Feta cheese for garnish, crumbled

Instructions
Place beef, 8 oz. feta cheese, oregano, thyme, parsley, rosemary, salt and pepper in a mixing bowl, mixing well to incorporate. Weigh into 6 oz. portions. Place portion in dish and form into an oval patty. Season patties with salt and pepper and pan fry to desired temperature. Heat pita. Spread tzatziki over entire pita. Place romaine, tomato, red onion and cucumbers on bottom half of pita. Place feta cheese on top of burger patty to slightly melt. Place burger on top of pita and close to eat.
