Recipe and Procedure for Maple Chipotle Glazed Pork Chops
Yield 4 servings

Ingredient Qty.
Pork Chops, Bone In, thin cut 6 ea
Garlic powder 2 t
Cinnamon, ground 1 t
Cumin, ground 1 t
Kosher salt 1 t
Smoked paprika 1 t
Pepper, freshly cracked 1/2 t
Butter, unsalted 2 T
Maple Syrup 1/4 cup
Chipotle Puree, seeds removed optional 1 T or to taste
Lime juice To taste
Kosher salt To taste
1.    In small saucepan, combine maple syrup, chipotle puree and lime juice.  Heat gently to a simmer.  Taste and adjust seasonings with kosher salt.  Set aside. (Can be made two days ahead).
2.    Combine garlic powder through pepper in a small bowl; rub evenly over pork.
3.    Place butter in a large saute pan and heat over medium high heat.  When foam has subsided, add pork and cook until cooked through, about 8-9 minutes, turning once.  Remove from pan and glaze with maple chipotle glaze.  Serve with roasted sweet potato halves.

Recipe and Procedure for Pan Seared Pork with Mustard "Cream" Sauce
Yield   4 servings


Ingredient Qty.
Pork Chop, Boneless, thin cut 4 each
Egg whites 1-2 ea
Panko To bind Shallot, minced1 ea
White Wine ½ cup
Creole or Stone Ground Mustard 2 T
Sour Cream,  Reduced fat, or nonfat ½ cup
Kosher salt To taste
Italian Flat Leaf Parsley, minced 1 T

1.    To prepare the crust, mix the egg whites and salt together until combined, adding enough panko so crust is not runny, and reserve.
2.    Place about one tablespoon of the crust mixture on top of the pork and spread evenly around the top. Refrigerate until needed.
3.    Heat a large saute pan over medium high heat.  Add 1 T of grapeseed oil.  When oil begins to shimmer, sear the crust side. Turn pork over, lower heat slightly and finish cooking, about 3 minutes more.  Hold in a warm oven or cover with foil.
4.    Prepare sauce in same pan.  Add shallot and sauté until aromatic, about 30 seconds.  Deglaze with white wine and reduce au sec.
5.    Add mustard and combine.  Add sour cream, whisk to combine.  Taste for seasonings, remove from heat.  
6.    To serve, place pork on center of plate spoon sauce around pork. Garnish with freshly minced Italian flat leaf parsley, if desired.
