Brat Haus Waffle

2 cups all-purpose flour
3/4 cup sugar
3-1/2 teaspoons baking powder
2 eggs, separated
1-1/2 cups milk
1 cup butter, melted
Combine flour, sugar, baking soda in one bowl
Lightly beat yolks, add butter, milk and vanilla
Whip whites to stiff peaks and fold into batter
Preheat your waffle machine and watch magic happen

Hayden Flour Mills Wheat Berry Salad with McClendon Beets and Black Mesa Ranch Goat Cheese
1          c          wheat berries, cooked
2          ea         red beets, roasted
2          ea         golden beets, roasted
3          oz         mixed greens
3          oz         Pesto vinaigrette
2          oz         Goat Cheese
Combine all ingredients minus the cheese.  That's for garnish and to make it look pretty. Taste your food and adjust with salt, pepper and a little lemon juice if it needs a little pop.
Rhubarb Compote
3          lb         rhubarb
2          lbs        strawberries
1          cup       honey
1          cup       apple juice
1          ea         lemon, zested and juiced
To        taste     black pepper, if so desired

Crispy Ribs with Black Bean and Sweet Corn salad and Chimichurri

2          ea         rib racks
2          G         chicken stock
3          ea         onions, quartered
1          ea         celery, bunch chopped
3          ea         carrots, rough chopped
1          ea         garlic, head 1Ž2'd
2          ea         bay leaf
2          T          Black peppercorns
1          ea         Four Peaks six pack for your enjoyment
3          oz         olive oil
One night when you are done grilling your steaks get a good sear on these ribs before your braise them.  In a large braising pan heat up your olive oil and get a final sear on those ribs if they didn't get enough for you on the grill. Remove and add veggies and get a bit of color on those as well.  Add ribs to veggies and through in a beer and your stock. Bring to a boil, reduce to a simmer, as soon as possible.  Braise in a 280-300 degree oven until tender, or falling off the bone.
Bean salad
1          cup       black beans, cooked not canned
1          cup       fresh sweet corn
1          bu        green onion grilled and chopped
1          bit        of cilantro
To        taste     cumin, ground
To        taste     coriander, ground
To        taste     black pepper
2          T          lime juice
2          T          olive oil
