As we really head into the fall season and welcome October, there are some delicious recipes to try out on your grill.
Cadillac Ranch is celebrating what they call "Porktober"! Here are the recipes featured on Monday's show:
1) 1/4 pound Cherry wood smoked bacon
2) 1/4 pound 80/20 ground chuck
3) Butter lettuce
4) 1/2 avocado
5) 1/4 tomato sliced
6) 1 dill pickle spear
7) 1 burger bun
8) 1/2 cup mayo
9) 1/2 red onion sliced
10) 2 oz. olive oil
11) 1 tablespoon butter
1) Burger patty: Grind the bacon and then mix thoroughly with the beef to form 8oz patties.
2) Grilling: Preheat your grill to 500 degrees and place patty on the grill and cook until patty reaches an internal temperature of 160 degrees
3) Caramelized onions: In a hot sauté pan with olive oil sauté the onions until they are caramelized and soft add salt and pepper to taste
4) Avocado mayo: Add chopped avocado to mayo and mix thoroughly
5) Toasted bun: Smear bun with butter then toast on a preheated grill or flat top pan
6) Build the burger: Take the bun and add the patty to the bottom bun, smear the top bun with the avocado mayo, top the burger with the caramelized onions, then the tomato slices and then the lettuce. Place the top bun on and skewer with a pick to hold it together. Garnish with a pickle spear and side dishes.
THE BOSS HOG
1) 2 cherry wood smoked bacon slices
2) 1 - 80/20 ground chuck patty
3) 1/2 sliced red onion
4) 2 oz BBQ sauce
5) 4 oz pulled pork
6) 4 oz dry rub
7) 1/4 cup seasoned flour
8) 1 burger bun
9) 1 table spoon butter
10) 1 dill pickle spear
1) Pulled Pork: Coat 4 pound pieces of boneless pork butt with dry rub spices, wrap in clear kitchen wrap, then aluminum foil, roast in 250 degree oven for at least 6 hours, unwrap pork carefully and pull with fork or tongs place pork in a pan to hold and cover pork with it's own pan drippings.
2) Grilling: Preheat your grill to 500 degrees, place patty on the grill and cook until patty reaches an internal temperature of 160 degrees.
3) Onion straws: Buy premade from store if making dish at home as we make ours daily in a commercial deep fryer.
4) Cooked bacon: For best results cook bacon on a sheet tray in a 350 degree oven until the bacon is extra crispy and firm, remove from bacon fat and allow it to cool off on a flat paper towel, save bacon grease for other cooking.
5) BBQ sauce: Make your own recipe or buy your favorite from the store.
6) Toasted bun: Smear bun with butter then toast on a preheated grill or flat top pan.
7) Build the burger: Take the bun and add the bacon and then the patty to the bottom bun, top the burger with the pulled pork, then the fried onions and then the BBQ sauce, place the top bun on, and skewer with a pick to hold it together. Garnish with a pickle spear and side dishes.
BACON CARAMEL BROWNIE
1) Cherry wood smoked bacon
2) 1/2 cup butter
3) 1 cup white sugar
4) 2 eggs
5) 1 teaspoon vanilla extract
6) 1/3 cup unsweetened cocoa powder
7) 1/2 cup of all-purpose flour
8) 1/4 teaspoon salt
9) 1/4 teaspoon backing powder
10) Caramel sauce
11) Peanut butter ice cream
1) Cooked bacon: For best results cook bacon on a sheet tray in a 350 degree oven until the bacon is extra crispy and firm, remove from bacon fat and allow it to cool off on a flat paper towel, save bacon grease for other cooking, crumble or chop prepared bacon into 1/4 inch bacon bits.
2) Oven: Preheat oven to 350 degrees. Grease and flour an 8 inch square pan.
3) Brownie batter: In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan. Bake in preheated oven for 25 to 30 minutes. Do not overcook. Allow to cool before cutting and serving
4) Brownie: Cut brownies into 4 inch square servings, plate brownie while warm or reheat them in a microwave until warm and soft, sprinkle 2 oz of crumbled bacon a top the brownie, then drizzle caramel sauce over the bacon topped brownie, serve with a large scoop of peanut butter ice cream
