Prawns Dinner with a zesty tomato sauce
Ingredients:
SERVES 4
20 Medium sized tiger prawns (de-shelled and cleaned)
32oz tomato sauce
2 teaspoon salt
2 tea spoon oregano
2 tea spoon basil
1 tea spoon black pepper
1 table spoon ground garlic
4 table spoons olive oil
1/4 cup copped parsley
4 table spoons crushed feta
1/4 cup diced onion
Directions:
Use a large frying pan or med. sauce pan. Put the olive oil in the pan and heat on medium. Add garlic and onions then sauté until caramelized. Then add salt, pepper, basil, oregano. Heat until aromatic (approx. 1 min). Then add prawns to pan keep agitating to cook both sides of shrimp and to ensure not to burn spices (sauté shrimp for approx. 1 1/2 min.). Now add 1/4 cup white wine. Once the wine starts to simmer add the parsley , feta and tomato sauce. Heat until sauce starts to simmer and then remove from heat. Serve with rice or noodles and or Grilled veggies. Garnish with feta crumbles.
