PHOENIX - Sonoran Living Live hosts Terri O and Susan Casper share their favorite yummy pancake recipes on National Pancake Day.
Terri O's Cottage Cheese Pancakes
1/2 cup of oatmeal or oatmeal flour
1/2 cup cottage cheese
1 tsp vanilla
4 egg whites
a few drops of maple flavored Stevia
Fluff up egg whites. Fold in oatmeal and remaining ingredients. Yummy!
Susan Casper's Lemon-Blueberry Pancakes
Basic buttermilk pancakes
1 1/2 cups all-purpose flour
1/4 cup sugar
1 1/2 tsp baking powder
1/2 tsp each baking soda and salt
1 3/4 cup buttermilk or whole milk
2 large eggs
3 Tbsp unsalted butter, melted
Lemon-blueberry pancakes
Add 1 tsp grated lemon zest to the buttermilk mixture. Stir 1 1/2 cups fresh or frozen blueberries into batter. Serve with a squeeze of lemon or blueberry syrup.
1. In a large bowl, whisk flour, sugar, baking powder, baking soda and salt. In a 4-cup glass measure, whisk buttermilk, eggs and melted butter; add to flour mixture. Whisk until evenly blended.
2. Heat a griddle or a large, heavy nonstick skillet over medium heat. Lightly oil griddle. Spoon batter for each pancake onto griddle cook about 3 minutes or until air bubbles form on top and underside is golden brown. Flip pancakes; cook about 2 minutes more until golden brown on bottom. Serve with maple syrup or any topping you'd like and enjoy.
This recipe makes about 16 4-inch pancakes.
