Here's a recipe from Thursday's show:
TRADITIONAL CARAMEL POPCORN BALLS
3 C of All Natural Popcorn (microwave is okay)
1 C Heavy Cream
1 C Pure Cane Sugar
1/2 C Light Corn Syrup
2 TBSP Unsalted Butter
1/4 TSP Kosher Salt
2 TSP Real Vanilla
Pop the corn according to package instructions; while hot, carefully open package and empty the corn into a large bowl.
To make the caramel:
Warm the cream in microwave and have ready. Place the sugar and corn syrup in a large heavy-bottom saucepan. Cook over medium heat, stirring occasionally until the sugar dissolves. Stop stirring, raise heat to medium-high and simmer until the sugar reaches the "hard-crack" stage, or 305 degrees on a candy thermometer. Add butter and salt to the sugar mixture. Slowly pour in the cream and vanilla. Reduce the heat to medium and continue to cook until the sugar reaches the "soft-ball" stage, or 240 degrees on a candy thermometer. Remove from the heat and pour caramel over the popcorn and stir to evenly coat. When the coated popcorn is cool enough to handle, coat your hands with butter and shape popcorn into 15 balls about 3 1/2 inches in diameter. Place balls on parchment paper and allow to sit and cool to setup for one hour.
