Carne Asada Street Tacos
1/2 cup olive oil
1 lb top sirloin
1/4 minced garlic
1/4 cup red enchilada sauce
Salt and pepper to taste
Mix all ingredients together and leave over night to marinate. When you are ready to cook remove the meat from the refrigerator and leave at room temperature for 15-20 minutes. Cook on a high heat grill until desired doneness. Serve on top of of tortillas and with fresh salsa.
6 ripe avocados
1/4 cup mayonnaise
1 tablespoon onion
1 tablespoon garlic
1 tablespoon tomatoes
1 tablespoon jalapeño
1 tablespoon cilantro
Remove avocado from its shell and mash with all its ingredients. Season with salt and pepper to taste.
4 cups all purpose flour
1 teaspoon kosher salt
2 teaspoons baking powder
2 tablespoons lard
2 tablespoons unsalted butter
Whisk the flour, salt, and baking powder together in a mixing bowl. Mix in the lard and butter with your fingers until the flour resembles cornmeal. Add the water and mix until the dough comes together; place on a lightly floured surface and knead a few minutes until smooth and elastic. Divide the dough into 24 equal pieces and roll each piece into a ball.
Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. Place the cooked tortilla in a tortilla warmer; continue rolling and cooking the remaining dough.
Grill corn over open flames until corn is cooked and slightly charred, roll in butter and sprinkle cotija and parmesan cheese.
1 pound fresh roma tomato
1/4 pound fresh jalepeño
1/4 pound fresh yellow hot jalepeño
1/2 cup fresh cilantro
1/2 cup yellow onion
1/2 cups green onion
Grill tomatoes and both type of jalapenos until they become heavily caramelized. If you want the salsa spicy leave all the seeds and veins in the jalapenos. If you want the salsa less spicy remove the seeds and veins. Puree to your taste either chunky or very smooth. Then add fresh cilantro, yellow onion and green onion. Season with salt to your taste. Chill and enjoy!
