Making sure you always have ingredients for dinner

There are 12 must-have items for your kitchen that'll ensure you have quick and healthy dinner ideas all the time. Tracy Bowers from MOPS (Mothers of Preschoolers) calls them the "Delectable Dozen."

Those 12 foods are:

Pantry:
1) Canned beans
2) Canned tomatoes
3) Pastas or grains (like quinoa or rice)
4) Chicken broth
5) A fun canned vegetables (artichokes, roasted peppers, olives, etc…)
6) Quality olive oil

Fridge:
7) Chopped garlic
8) Dijon mustard
9) Parmesan cheese
10) Fresh veggies
11) Vinaigrettes

Freezer:
12) Chicken breasts (marinated)

Here are the recipes featured in today's show:

 

Chicken with Tomatoes and Chickpeas

2 T. olive oil

4 boneless, skinless chicken breasts

1 t. kosher salt

½ t. pepper

2 t. chopped garlic

1 can of chopped tomatoes

1 can of chickpeas

1 lemon

1 t. honey

2 T. butter

2 sprigs rosemary

½ c. chicken broth

Marinate chicken overnight with 1 T. olive oil, salt, pepper and rosemary.  Heat oil in a oven proof skillet and brown chicken on both sides.  Add garlic, tomatoes, chickpeas.  Bring to a simmer and add rosemary sprigs, juice from one lemon, honey, chicken broth, and butter to the pan.  Cover and place in a 350 degree oven for 25 minutes.  Serves four.

 

Zucchini and Corn Waffles

2  ½ cups flour

1 T. baking powder

2 t. kosher salt

1 t. cinnamon

1 can corn

2 medium zucchini

1 ½ cup milk

2 large eggs

1 t. pepper

1 T. maple syrup

2 T. melted butter

Mix flour, baking powder, salt, pepper, cinnamon in a bowl.  Shred zucchini with a cheese grater and squeeze out moisture.  In a separate bowl mix beaten eggs, milk, butter, maple syrup, zucchini and corn.  Add dry ingredients to the wet ingredients and stir until incorporated.

Pour one cup of mixture into an oiled waffle iron and cook until golden brown.

Makes 4 waffles.
