The Incredible Hulk!
1 cup ripe pineapple
1 cup ripe mango
1 small avocado
2 cups baby spinach
2 cups kale
4 apples, juiced (roughly 2 cups- you can use an organic, unfiltered apple juice*)
1 hot house cucumber, juiced (can sub 1 cup spring water and add 1/2 cup chopped cucumber*)
1 small wedge of lime
Puree together in your blender till smooth & enjoy! You can substitute the apple juice & cucumber juice as show above if you do not have a juicer, and can freeze your fruit to keep this smoothie nice and cold. Feeling extra groovy? Blend in 1/2 cup coconut milk and 6 ripe, pitted medjool dates pour into popsicle molds and freeze for a delicious (and nutritious!) summertime treat.
Raw Zucchini Pasta
8 cups chopped, sliced or shredded raw zucchini
1 1/2 cups cashews, soaked for 4-6 hours, drained
2 cups coconut milk (can use canned coconut milk)
2 tablespoons nutritional yeast
1/2 tablespoon miso paste
2 garlic cloves
salt & pepper to taste
Puree all of the alfredo ingredients in a blender till smooth, toss with pasta and enjoy! If you'd prefer this dish warm, add an extra cup of coconut milk to the alfredo and heat over medium heat, stiring constantly. As the sauce starts to thicken toss in the pasta and turn off the heat. Toss to combine and serve with your favorite protein or alone as an indulgent meatless meal.
Guiltless Fudge Brownies
2 cups walnuts or pecans well chopped (or 1 cup of both!!)
2 cups pitted, medjool dates
1/4 cup of raw cacao (can sub any unsweetened bakers cocoa)- can add more and extra tablespoon or so if you're a fellow chocoholic
1/4 cup unsweetened, shredded coconut
2 tablespoons agave nectar
1/2 teaspoon vanilla
Pulse chopped nuts until granular and fine, then add dates and remaining ingredients into the food processor. Pulse together until combined. Press into a parchment lined brownie pan and chill for 30 minutes in the fridge. Unmold, cut and enjoy. For an extra level of love try it with our raw salted caramel:
Puree 8 pitted medjool dates, 1/2 tsp of vanilla, heavy pinch of salt, 1/4 cup of agave nectar and 1/4 cup of maple syrup together till smooth, pour over the brownies and dig in :)
