Executive Chef Thomas Nasworthy from Carefree Station prepares gourmet french fries and homemade dipping sauces. He uses Yukon Gold Fries cooked in duck fat.
Duck Fat French Fries
Ingredients:
2 to 3 pounds Yukon Gold Potatoes
1 gallon duck fat (can substitute peanut or canola oil)
Water
Preparation:
Julienne cut potatoes in quarter inch strips. Soak potatoes overnight in water. Blanch potatoes in 250 degree duck fat, 10 to 12 minutes or until tender. Drain well and then freeze. Fry potatoes in 375 degree duck fat 6 minutes or until crispy.
