Sheila Bryson, owner of Soul Cafe in Scottsdale, is helping us celebrate the holidays with some unique dishes for the seasons.
Blue Moon Pancakes with Blood Orange Syrup and Bratwurst Sausage
3 cups flour
3 tablespoons white sugar
3 teaspoons baking soda
¾ teaspoon salt
Zest from one orange
3 cups Blue Moon Beer
½ cup milk
1/3 cup melted butter
Torani Blood Orange Syrup
( find it where the coffee syrups are )
I like to thin it down with water and orange juice heat up first
In a large bowl, combine flour, sugar, baking powder, baking soda, orange zest and salt. In a separate bowl, beat together beer, milk, eggs and melted butter. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir.
Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot. Serve with cooked bratwurst Sausage and blood orange syrup
Pumpkin Chipotle Tortellini
Chipotle Pasta Dough
3 cups flour
½ teaspoon salt
½ cup water
1 table spoon chipotle in adobo sauce (puree to make a paste)
Pile the flour on a work surface make a well in the middle and add eggs, water, chipotle paste and salt. Move the flour a little at a time to the center until it makes a stiff ball keep kneading until it gets soft and glossy. Wrap in plastic wrap and give it a rest while making your filling.
Pumpkin Filling For Tortellini
1 cup of canned pumpkin
1 cup ricotta cheese ( use New York style )
½ cup grated parmesan
½ cup shredded mozzarella
1 tsp. chipotle puree
pinch of black pepper
Nutmeg Béchamel Sauce
2 tbsp unsalted butter
2 tbsp flour
1/2 tsp salt
1 1/2 cup milk
1/4 tsp nutmeg
1/2 cup grated parmesan cheese
Melt butter over medium-high heat in wide saucepan
Add flour, salt and nutmeg and cook, stirring with whisk, until light golden brown
Add milk and continue whisking, until mixture is thick and bubbly
Remove from heat and adjust seasoning, adding cheese if desired and stirring until melted
Apple Cider Vodka
A large jar
Vodka to fill jar, cheap vodka is fine
Cut apple wedges to fill jar a mix of red and green
Whole cloves about
Fill jar with apples to fill 3/4s of the way up add cinnamon sticks down sides of jar and mixed in along with the cloves the more you use the stronger the flavor will be don't go crazy with the cloves. Fill jar all the way to the top with vodka. Cover and let sit. Does not need to be refrigerated in a couple days it will start to pick up the flavors in the vodka in a week it will be ready to go.
Drink by it self or add cranberry juice for a candy apple flavor. Yummy!
