Paul Apana from the Village Tavern shares a recipe for quinoa salad with chicken, feta cheese and a citrus dressing.

Dressing
¼ cup oj
2 tbsp extra virgin olive oil
1 ½ tbsp buttermilk
½ tsp salt
Pinch black pepper
2 tbsp honey

Whisk ingredients together

Salad
3 cups cooked quinoa
1 cup finely chopped green onions
1 cup dried cranberries
3 tbsp chopped parsley
3 tbsp sliced, toasted almonds
1/3 cup mandarin oranges
½ cup feta cheese
1 cup shredded chicken

1. Allow prepared quinoa to cool
2. Combine ingredients in bowl. Gently fold together
3. Add dressing
4. Serve
