Pork Chop Marinade:
1 cup apple juice 1 tbsp pickling spice
1 cup pineapple juice 1 tsp crushed red chilis
1/2 cup apple cider vinegar ¼ bunch chopped basil
1 bunch chopped cilantro 1 ½ tsp granulated garlic
¼ cup liquid smoke 1 tsp salt
½ bunch chopped parsley 1 tsp black pepper
¼ bunch chopped oregano 5 cups water
Combine all ingredients in a large bowl and mix thoroughly. Pour some marinade in bottom of pan pork chops are to be marinated in. Place chops in pan and pour remainder of marinade over chops. Cover with plastic wrap and let them marinade at least 4 to 6 hours. If grilling them on your outside grill make sure and light the charcoal at least 1 hour prior to the time you want to start cooking. We serve our thick and juicy pork chops with B-B-Q Sauce but y'all can serve them with whatever tickle's Your fancy!!!
Rib Eye Steak:
Get down to your favorite butcher shop and have them cut you whatever thickness of rib eye you prefer. Here at the Rooste we cut all our own meat and prefer a bone-in rib eye that's about 1" thick. We do bone-in because it gives the steak more flavor. Over all, the rib eye is one of the more flavorful steaks you can buy because of all the marbling that they have.
Tips for Grilling outside:
Make sure you light the fire about an hour prior to the time you want to start cooking. Clean the grill when it's nice and hot and the fire has burned off anything that might be on your grill. After you brush the grill take a wet towel and clean off the grill to get off any leftover carbon (be careful not to burn yourself!). Make sure you always have plenty of water and keep yourself hydrated while grilling outside, especially in the Arizona heat. Make sure and have a spray bottle filled with water close by. If your steaks start flaming up too much use the spray bottle to douse the fire and they won't get to charred.
